I made this last night only because recipe reviewers raved about it I hate raw mushrooms so I was very skeptical. Boy was I wrong, I could seriously eat this everyday! It was the perfect blend of flavors and so refreshing. Bruce really liked it too. Try it, I think you'll be surprised.
Mushroom & Parm Salad
1 pound button mushrooms, thinly sliced
1/3 c chopped flat-leaf parsley
1/4 c olive oil
1/4 c fresh lemon juice
Parmesano Reggiano to taste
Mix the mushrooms and parsley then add oil and lemon juice & season with black pepper. Using a vegetable peeler, shave as much parmesan on as you want and after you do, taste before you add salt as the parm is quite salty.
